      Dry-Fried Green Beans with Minced Pork and Preserved Vegetables

      制作方法一:

      Style: SiChuan Cuisine

      Characteristics: It is red and green in color, salty and spicy in taste.

      Ingredients:

      Green beans 500g

      Ground meat(pork) 100g

      Dry red peppers 2

      Garlic cloves 2

      Ginger 5g

      Salt 3g

      Chicken essence 2g

      Chinese cooking wine 15ml

      Starch 2g

      Light soy sauce 10ml

      Cooking oil 20g

      Note: the amount of the ingredients especially the seasonings listed above can be

      appropriately used according to one's personal taste.

      Preparation:

      1. remove the ribs of green beans ,and cut the green beans into 5cm long.

      2. cut the red peppers into 1 cm long.

      3. cut the garlic and the ginger into very small pieces.

      4. put the cooking wine , light soy sauce and starch into Ground meat, and mix thoroughly.

      Steps:

      1. Place a wok over high heat until hot. Add some cooking oil, and add in the green beans when the oil is hot. Stir-fry it for 3 minutes until the surface of green beans become crinkle. Then remove the beans out of the wok ,and put them in a plate.

      2. Add some cooking oil, and add in Ground meat when the oil is hot. Stir-fry it into scattered, put in the ginger and dry red peppers .Stir-fry it for 30 seconds until

      fragrant.

      3. Put the beans back in the wok , add in salt and chicken essence. Then stir-fry it until there is no liquid in the wok.

      4. Finally, dry stir-fry green beans is complete. Turn off the heat, remove it

      out of the wok and put into a prepared fine porcelain plate. Serve with rice.

      Tips:

       In the first step, the temperature of the oil can not too high .Use middle heat.

       Make sure the green beans are completely cooked. Raw green beans are poisonous.

      制作方法二:

      用料:

      四季豆1斤、绞肉1两、虾米1大匙、冬菜2两,葱末3大匙、姜末1茶匙、蒜末1茶匙,酒1茶匙、麻油1茶匙、糖1/4茶匙、味精1/8茶匙、盐1/4茶匙、醋1/4茶匙。

      制作方法:

      1、四季豆摘洗净,沥干水分。虾米用水泡软,切末。冬菜洗净,亦剁末。

      2、锅中烧热3杯油,用大火炸四季豆,炸至外皮微皱即捞出。

      3、倒出炸油,留油1大匙,放入虾米、冬菜、蒜末、姜末及绞肉,炒干。

      4、加入四季豆与其他调味料,待炒拌入味后,起锅置入盘中。

      注意:

      在干煸时,火候要小心掌握,不要将四季豆烧焦了!
